From the name of the cupcakes, you know its gonna be a damn rich chocolaty cupcake!!
Dawn saw the photos of the cupcakes that I've made with Val and she wanted to make cupcakes as well. Hence we baked cupcakes the day before she left! *See!!! I told you cupcakes are addictive!!!* That made me baking cupcakes 3 weekends in a row!! Yeah its fun but its damn tiring as well!! I am usually in the kitchen for more than 4 hours every time I make cupcakes!! That's because one batch can usually have 2 trays but this time we actually have enough batter to bake 3 trays!! Also, I usually make two types of frosting so that I can play around decorating the cupcakes and not to mention, frosting and decorating the cupcakes take up time as well!! The 4 hours is excluding washing up!! Luckily we need not wash up =D hehe got maid mar....... But then now I am smart dy, I use disposable piping bags and that save a bit of the washing up hassle!! =D
Anyway, Dawn choosed the Mississippi Mud Cupcake - it has crushed Oreo and chocolate chips in it =P~ Then I decided to make Meringue Nutella Buttercream and Meringue Strawberry Buttercream for frosting. I tell you.... the Meringue Nutella Buttercream is super super super yummy!!!!!!!! I can just lick and lick and lick on it non-stop!! Really damn yummy lor...... =P~
Anyway as we were too excited I forgotten to take a pic of all the ingredients like what I usually do. Here is the ingredients list! It's too good to not share it =D
3 ounces unsweetened chocolate, chopped and then melt it
1 cup all purpose flour
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 cup unsalted butter
1 cup sugar (I put less than that)
2 eggs
1tsp vanilla extract
1/2 cup sour cream
1/2 cup water
Oreo cookies
chocolate chips
So, clockwise - First beat the butter and sugar together until fluffy ( I beat it really long this time in hope that my cupcakes will rise nicely so that its not as hard as the PB cupcakes I made - and it works!! Our cupcakes were moist, soft and yummy!! However I don't know if its due to the beating) Anyway, after that add in eggs, then beat again and then add in vanilla extract and beat again. Next add in sour cream. Yeah its weird to add in sour cream but according to Dawn it is to make the cake moist and it did turn out moist so I am not sure if its the beating or the sour cream or the baking soda. Lastly add in flour, baking powder, baking soda, salt and alternate with water.
In the end you will get a yummy chocolate batter that look like this!! The batter taste really good even when it is not cooked!! =P~ It's like licking on rich yummy melted chocolate =P~
After you are done with the batter, crushed the Oreo. I prefer the Oreo pieces to be bigger so that when it’s mixed with the cake, you can have different texture and could actually taste the Oreo too.
Then you can put some Oreo bits and chocolate chips at the base of the cupcake paper. I think the chocolate chips are a bit too sweet even though we used the semi sweet ones.... So, the next time when I am making this cupcake again, I will use dark chocolate instead =D Then I think the cupcakes will be perfecto!!
Next add in the batter and then put more crushed Oreo and chocolate chips on top of the batter and slightly pressed it into the batter.
Put the cupcakes to bake at 175deg in a pre-heated oven. See my cupcakes are rising nicely =D

And after about 15-20 mins the cupcakes are ready!! YUMZ YUMZ!!! I think we should take it out 1-2 mins earlier but it was good enough!! I would say it’s really damn good!! hehe *I know, I know self praise again but this time its really worth praising lor* I am damn happy with the texture and moistness of the cake but I think its a bit tooooooo sweet!! I have already reduced the sugar for the cake but I think the culprit is the chocolate chips!! I think Val and Dawn put quite a lot in the cupcakes as well while I was busy preparing the frosting =)
Meringue Buttercream frosting is the best frosting =) Super yummy and have a nice texture that is easy to frost as well. At first I only used Nutella for the Meringue Nutella Buttercream frosting but the colour was too light and Val suggested putting in the leftover of the unsweetened chocolate from the cake and the result was excellent!! It is the most delicious meringue buttercream frosting I have tried!! =D *Not that I have tried a lot lar but its really super super delicious*
We then started to play with the frosting to show our creativity in decorating the cupcakes! I did a cupcake of my own name =D
And made for the others as well.... As you can see all of us have different colour stars and obviously mine is pink! =D

By the time we were done we were sooooo tired!! Standing in the kitchen for 4 hours!! It was really a tiring but eventful weekend for me!! I think I am old dy.... No energy to do so much in one weekend and so many late nights..... =) But was really glad Dawn came to visit.....
On a non related note, I brought my mum and bro for lunch at Bon Ton. They are having 50% discount for lunch for HSBC credit card holder.... The food is nice but I won't say that it is totally worth it lor.... The rack of lamb that my bro ordered was RM75 and there were only 3 pieces...... *Luckily 50% discount kaka* But it was really tender and juicy and flavourful. Me and my mum shared a platter and it was quite good as well.....

Amanda, apa looks good it is reaaaaaally good ar!! *hehe* To eat of course without frosting its also nice but the frosting is to make it look pretty! Not for the taste one lar! I actually scrape out some of the frosting when i eat also... but the nutella meringue frosting is really yummy too.... and the best part about making cupcakes is decorating it with frosting!!
